Parathas can be served for breakfast, lunch, or dinner, and sometimes even as an evening snack. These are also perfect for lunch boxes. There are two kinds of paratha - plain and stuffed. Today, I am sharing a stuffed version of paratha prepared using my family's favorite vegetable, i.e., potatoes or aloo.

Method 1 – Rolling Aloo Paratha
Mashing or grating potatoes properly is also very important. There should be no chunks of potatoes left in the mash as they will tear the parathas. Do not over mash to the extent they become pasty. So you can also grate them rather than mashing to avoid pasty texture. You can make as thin or thick you like. I make mine thin and about 8 to 9 inches.
Spread the aloo mixture on one of the roti as shown below. With this method, you will be able to make only 6 large parathas. Serve piping hot parathas with chilled yoghurt or pickle. You can also serve the aloo parathas with green chutney or coconut chutney or a light gravy.

Recipe for making tasty Aloo Paratha at home. Simple ingredients and instructions to cook delicious Alur Paratha within a few minutes. Expert Tips To Make Perfect Aloo Parathas
I am sharing the same with you all here. Peel and boil the potatoes using your preferred choice of cooking. For example, you can pressure cook or microwave or cook the potatoes on stove top.

This is to reduce the moisture in the stuffing. Also, make sure no chunks of potato are left while you mash them. After sealing aloo in the dough, do not forget to flatten and spread the stuffing. This way the stuffing is well distributed and won’t come out while rolling. Avoid using too much flour while rolling as it makes the parathas hard and dry. Roll the aloo paratha as thin or thick you like without tearing them.

Aloo cheese paratha– You can follow this cheese paratha recipe, add 2 boiled and mashed potatoes to the cheese filling and make parathas. To make aloo ka paratha you need very few simple ingredients only. It is actually made with the pantry staples of most Indian kitchens like potatoes, whole wheat flour, butter and few basic spice powders. Add some methi leaves and grated boiled potatoes. Red chilli powder, turmeric powder, crushed ajwain and hing. You can add curd or malai in place of ghee.
This avoids the parathas from tearing and spreads the filling evenly. Place the aloo stuffing in a 5 inch roti. Then make pleats and bring all the edges on top.
